What to cook instead of cold soup: try this Greek soup

You will need:

  • vegetable broth – 800 ml.
  • green apples – 8 pcs.
  • onions – 2 pcs.
  • lemon – 1 pc.
  • natural yogurt – 250 ml.
  • olive oil – 2 tbsp.
  • curry – 1/2 tsp.
  • mint, salt, black pepper to taste.
  • How to cook

    1. Peel the onion and cut into small cubes, peel and core the apples, cut into large cubes.

    2. Heat the oil in a thick-bottomed saucepan and fry the onion over medium heat until transparent, then add the apples, curry and salt.

    3. When the apples are soft, pour the vegetable broth into the pan and bring the contents to a boil, then cook for 40 minutes.

    4. Remove from heat, let cool, add lemon zest and juice, blend the contents and put in the refrigerator.

    Serve with yogurt, when the soup has completely cooled, garnish with chopped mint leaves. Enjoy!
