Even the neighbors will hear the crunch: we put cucumbers for the winter without vinegar and sugar – you can store them without a basement

Picking up cucumbers for the winter without vinegar and sugar is a completely realistic task..

We tell you the recipe for delicious pickled cucumbers, for storing which you do not need a basement.

How to deliciously pickle cucumbers

Put horseradish leaves, cherry (black currant) leaves, dill sprigs and umbrellas (with seeds) on the bottom of three-liter jars. You can add black peppercorns.

Put the cucumbers in the jars not too tightly, add some greens in the middle.

For the brine, take two heaped tablespoons of salt per liter of water. Bring to a boil, pour over the cucumbers.

Cover the jars with lids and leave for two days at room temperature.

The brine will become cloudy, foam will appear, the cucumbers will change color. If this does not happen, the jars should be moved to a warmer (but not hot) place and left for another day.

Be sure to put plates under the jars, because the brine will leak out.

After two days, remove the foam and add two tablespoons of mustard powder to each jar. If there is not enough water, top up to the top.

Cover the jars with lids again and leave to ferment for another day. After a day, drain the brine into a saucepan and boil for 8-10 minutes.

Put the cucumbers into small jars (sterilize them first), add the seasonings that were fermented together with the cucumbers (you cannot add fresh herbs), pour in boiling brine, and roll up. You can even store such cucumbers at room temperature.
