How to cook real shchi: an old recipe

Our magazine»s expert Yulia Arkhipova, a cook and fourth-category baker, told us how to cook real shchi.

You will need:

  • 500 gr beef.
  • 5 potatoes
  • 2 onions
  • 2 carrots
  • 3 tomatoes
  • 5 garlic cloves
  • 300 gr cabbage
  • salt, spices and herbs to taste
  • How to cook

    1. Pour 2. 5 liters of water into a saucepan and set the meat to boil.

    2. Chop the onion and carrot and fry in a frying pan with vegetable oil.

    3. Next, add the diced tomatoes to the pan.

    4. When the meat is ready, add whole peeled potatoes (2 pcs) and cabbage. It is believed that sauerkraut is used for the classic recipe.

    Cut the remaining potatoes into cubes and add to the pan 20 minutes after adding the cabbage.

    5. After 20 minutes, add the fried mixture to the pan, take out the boiled whole potatoes, mash them into a puree, and then add them back to the pan.

    6. Add herbs and garlic, salt and spices, bring to a boil, turn off, let it brew, and serve. Enjoy your meal!
