Towards the end of the season, vegetables begin to bear fruit like crazy, and housewives barely have time to process the harvest into caviar..
Our magazine’s expert Yulia Arkhipova, a cook and fourth-category baker, told us how to make a delicious zucchini salad.
You will need:
zucchini – 1 kg;
carrots – 300 g;
sugar – 1 tbsp. l.;
garlic – 4 cloves;
salt, pepper (hot), herbs to taste;
coriander – 1. 5 tsp. l.;
soy sauce – 1 tbsp. l.;
vegetable oil – 10 tbsp. l.;
apple cider vinegar – 2 tbsp. l.
How to cook
1. Grate the carrots and zucchini on a Korean carrot grater.
2. Press the garlic through a press and mix the vegetables together, adding spices, salt and sugar.
3. Next, pour hot vegetable oil over the mixture, add soy sauce and vinegar, stir and let sit for several hours.
When the vegetables are soaked in the marinade, serve.
