How to cook zucchini soup: light, filling and very tasty

Our magazine expert Yulia Arkhipova, a cook and fourth-category baker, told us how to make zucchini puree soup with basil.

You will need

  • zucchini – 700 gr.
  • Leek – 250 gr.
  • Celery (stalk) – 170 gr.
  • Basil (fresh) – 55 gr.
  • Garlic – 3 cloves.
  • Vegetable oil – 5 tbsp.
  • Water – 1. 2 l.
  • Salt, black pepper (ground) to taste.
  • How to cook

    1. Cut the zucchini, leek, and celery stalks into small cubes. Press the garlic through a press.

    2. Pour vegetable oil into a saucepan, heat it up, and add the leek and celery. Simmer for about 5 minutes, adding oil if necessary.

    3. Add garlic, simmer for 30 seconds, and add the zucchini. Simmer for 1 minute, and add basil leaves, salt, and stir.

    4. Pour in water, bring to a boil, cover the pan with a lid, cook over medium heat for 10 minutes, stirring.

    Remove the soup from the heat, chop the contents with a blender, add fresh basil, for taste you can also add lemon juice and a little olive oil. Enjoy your meal!
